Fourth-generation grower. First-generation disruptor. Yuki Minami is part of a new wave of Brazilian coffee producers rewriting the rules from the inside out. After a stint in multinational agribusiness, she returned to her family’s farm in Cerrado Mineiro and founded Aequitas Coffee—a producer-exporter hybrid focused on innovation, transparency, and flavor-forward experimentation.
At Fazenda Olhos d’Água—named for its natural springs—Yuki blends tradition with bold processing techniques: think anaerobic fermentations, coferments with pineapple, and meticulous natural lots. The farm spans 442 hectares in the Rio Paranaíba area, sitting at 1,145 meters above sea level. The results are anything but typical—her Yellow Catuai and other cultivars deliver profiles ranging from honeyed citrus and milk chocolate to tropical fruit bombs with silky finishes.
