People & Land
High in the misty highlands of Panama, on the rain-drenched slopes of a volcano, something remarkable is taking place.
Finca Deborah sits above the clouds, where nutrient-dense volcanic soil and extreme elevation create ideal conditions for growing one of the rarest and most prized coffee varietals in the world: Geisha. Despite its reputation, Geisha is notoriously hard to grow—but this unique microclimate makes it possible.
The cooler temperatures and high altitude slow the plants’ metabolism, which encourages them to concentrate sugars in the cherries over time. With over 2,200 mm of rainfall annually, this environment allows Geisha to flourish naturally—without pesticides or herbicides—resulting in an exceptionally clean and complex cup.
The farm’s isolation and elevation also protect the plants from pests and disease, allowing more of the plant’s energy to go toward fruit development. This translates to clarity and depth in the cup that few producers can match.
Jamison, the visionary behind Finca Deborah, has built a reputation as one of the world’s most innovative coffee producers. Drawing inspiration from the wine world, he’s led the way in applying advanced fermentation techniques and emphasizing varietal expression and terroir.
He helped pioneer Carbonic Maceration and Anaerobic processing methods in coffee, setting a new standard in the industry. At the core of his farming philosophy is a commitment to sustainability—using natural inputs and mineral blends to support plant health while strictly avoiding chemical interventions.
His relentless pursuit of quality, both in the field and during processing, has earned him global recognition and positioned Finca Deborah among the top-tier producers of specialty coffee worldwide.
